And now for some real food

Digest has become something of a repository for health and diet news in the last few months and slipped away from the other half of its remit- to be about good food. So I'm going to start posting foodie stuff and I've got a larger project lined up to start later this week.



On Monday we went to one of Manchester's specialist food markets and picked up a nice pork joint from the Hallsford Farm stall. There isn't really a recipe for this one. I just followed the advice and rubbed a bit of olive oil and some salt onto the fat before sticking it in the oven at gas mark 7 for an hour (20 minutes per pound plus an extra 20 minutes). I roasted a couple of beetroot in the same tray, safely wrapped in tinfoil so they didn't stain the joint. The meal was finished with boiled purple sprouting broccolli and roast potatoes. A recommendation for roasting taties- find yourself some dripping, it's gorgeous. Boil the potatoes for a while before putting them in the oven then shake them around to break the surface and make them fluffy before spooning the dripping on top.

Before serving the pork I cut the fat off and put it back in the oven on a low heat to cook for a while longer. The greasy, crunchy crackling was a great end to the meal.
