Food Festival Special: the V Pud

It has to be one of the most ludicrous concepts going- the vegetarian black pudding. Produced by award winners R S Ireland the V Pud promised to take the main ingredient out of "blood sausage" without losing any of the character. I had to give it a go.

Uncooked the proper black pudding looks richer, making the V Pud appear, well, anaemic. Texture wise they're similar, suggesting that it's the pearl barley that contributes most to this. They've both got the same secret herb and spices mix, but the veggie one is missing one obvious flavour.

Shallow fried the proper puds crisped up more than the veggie ones and were more melt in the mouth.
Overall, I would obviously go for bloody black puds every time, but the V Pud does a good job of simulating the experience for the non meat eater.
